Refreshing Persian cucumber salad with toasted walnuts, sultanas, and a yogurt dressing with dill and mint.
Ingredients:
  • 1.5 cups plain yogurt
  • 2 tablespoons roughly chopped walnuts
  • 3 tablespoons golden raisins (sultanas), roughly chopped
  • 1 tablespoon chopped fresh dill
  • 1 tablespoon chopped fresh mint
  • salt and freshly ground black pepper to taste
  • 1 large cucumber - peeled, seeded, and diced
Instructions:
  • Strain yogurt in a fine-mesh sieve lined with a coffee filter for about 20 minutes until you have approximately 1 cup of thick yogurt.
  • In a small skillet over medium heat, toast walnuts, stirring often until golden brown and aromatic, for 3 to 5 minutes. Let cool before using.
  • Combine creamy yogurt, plump sultanas, crunchy walnuts, fresh dill, mint, salt, and pepper in a spacious bowl. Introduce cooling cucumber and gently mix everything together. Chill in the refrigerator for 1 hour.
