Elevate Passover with sweet orange-water matzo brei or savory caramelized onion variation.
Ingredients:
  • Savory Matzo Brei
  • 4 tablespoon chicken fat or vegetable oil, divided
  • 1 medium onion, sliced
  • Pinch of sugar
  • 4 large eggs
  • 4 sheets of matzo
  • Salt and black pepper, to taste
  • Chives or parsley, chopped for garnish
  • Sweet Matzo Brei
  • 1 cup plus 2 tablespoons milk, divided
  • Pinch of salt
  • 1/2 teaspoon orange-flower water (optional)
  • 4 sheets matzo
  • 2 tablespoons unsalted butter
  • Cinnamon sugar or powdered sugar, for garnish (optional)
  • Or apple sauce , jam or preserve, on the side (optional)
Instructions:
  • To caramelize the onions for the savory matzo brei, heat 2 tablespoons of chicken fat or oil in a sauté pan. Cook the onions gently until soft and caramelized. Sprinkle with salt and sugar, cover, and simmer on low heat for 15-20 minutes. Stir occasionally. Remove from pan and set aside, then wipe the pan with a paper towel.
  • To soften the matzo, run them under cold water for 15 to 60 seconds until they reach your desired softness level.
  • In a large bowl, beat eggs with a pinch of salt and black pepper. Add broken matzo pieces (1/2 to 1 inch) and caramelized onions, then mix thoroughly.
  • Use chicken fat to sauté: Heat 2 tablespoons of chicken fat in a sauté pan over medium-high heat for 1-2 minutes. Pour in the matzo-egg mixture and cook while stirring until the eggs are softly set, about 90 seconds. Serve immediately, topped with chopped parsley or chives. Enjoy Sweet Matzo Brei.
  • In a large bowl, whisk together eggs, 2 tablespoons milk, salt, sugar, and orange flower water (if using) until well combined.
  • Break matzo into 1/2- to 1-inch pieces and soak in milk: In a separate bowl, combine the crushed matzo with a cup of milk, stirring well. Allow it to sit for at least 30 seconds to about 2 minutes to soften to your liking.
  • Combine soaked matzo with eggs: Transfer the soaked matzo from the milk bowl to the eggs bowl and mix thoroughly.
  • Sauté in butter: Melt butter in a large pan over medium-high heat. Add the matzo-egg mixture and stir constantly until eggs are just set, about 90 seconds.
