Cheesy Beef and Potato Casserole: Layers of seasoned ground beef, sliced potatoes, and mixed veggies, topped with melted cheddar cheese. A beloved family classic.
Ingredients:
  • 1.5 pounds lean ground beef
  • 2 cloves garlic, minced
  • salt and pepper to taste
  • 1 (10.5 ounce) can condensed French onion soup
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons prepared yellow mustard
  • 2 tablespoons cold water
  • 1 tablespoon all-purpose flour
  • 3 cups peeled and thinly sliced potatoes
  • 2 (10 ounce) packages frozen mixed vegetables, thawed
  • 1 cup shredded Cheddar cheese
Instructions:
  • Preheat your oven to 375°F (190°C).
  • Brown ground beef in a skillet over medium-high heat until fully cooked. Drain any excess grease. Season with garlic, salt, and pepper. Add onion soup mix, Worcestershire sauce, and mustard. Bring to a boil. Combine cold water and flour, then stir into the sauce. Simmer on low heat briefly, then remove from heat.
  • Place potatoes in a saucepan and cover with water. Boil for 3 minutes, then drain without overcooking.
  • Layer half of the savory beef mixture on the base of a 9x13 inch baking dish. Top with half of the potatoes, followed by a generous layer of mixed vegetables. Repeat the layers for a delicious and hearty dish.
  • Bake the dish covered for 50 minutes in the preheated oven. Then, uncover and sprinkle shredded cheese on top. Bake for another 10 minutes to melt the cheese.
