Indulgent Bacon Cheese Burger Twice-Baked Idaho Potatoes - a satisfying meal in one dish.
Ingredients:
  • 4 Idaho® Russet Potatoes
  • 0.5 cup melted butter
  • 1 cup sour cream
  • 1.3333333730698 cups shredded Colby-Jack Cheese, divided
  • 0.5 teaspoon granulated garlic
  • 0.5 teaspoon kosher salt
  • 0.25 teaspoon freshly ground black pepper
  • 1 pound Beef, ground, regular, cooked, baked, well done
  • 0.5 cup barbecue sauce
  • 6 slices bacon, cooked and crumbled
  • 2 medium green onions, sliced
Instructions:
  • Preheat your oven to 400°F.
  • 1. Scrub Idaho Russet Potatoes until they are clean, then dry them thoroughly. Place on a baking sheet and bake for 1 hour, or until fully cooked. Transfer to a wire rack to cool slightly before reducing the oven temperature to 375 degrees F.
  • Cut the potatoes lengthwise almost all the way through, keeping them intact at the base. Scoop out the potato insides with a spoon into a big mixing bowl. Mix in butter, sour cream, 1 cup of cheese, garlic, salt, and pepper. Mash or whip with an electric mixer to your preferred consistency.
  • Fill potato shells with mixture. Top with BBQ ground beef, remaining cheese, bacon, and green onions. Bake on a sheet.
  • Bake until potatoes are heated through and cheese is bubbly, approximately 20-25 minutes. Serve piping hot.
