Affordable and delicious kid-friendly meal, great for parties.
Ingredients:
  • 400g lean beef mince
  • 1 small brown onion, coarsely grated
  • 1 small carrot, coarsely grated
  • 40.00 ml plain flour
  • 20.80 gm tomato sauce
  • 22.60 gm barbecue sauce
  • 9.20 gm olive oil
  • 400g can diced tomatoes
  • 5.00 gm caster sugar
  • 20.00 ml fresh flat-leaf parsley leaves, chopped
Instructions:
  • Combine the mince, onion, carrot, flour, tomato sauce, and barbecue sauce in a large bowl. Season with salt and pepper, then mix thoroughly. Roll the mixture into balls using level tablespoons. Arrange the meatballs on a baking tray lined with parchment paper and chill in the refrigerator for 30 minutes.
  • In a large non-stick pan, heat oil over medium heat. Cook meatballs until golden brown, about 3 to 4 minutes. Transfer to a plate. Add tomatoes, sugar, and 1/3 cup cold water to the pan. Season with salt and pepper, then simmer until combined.
  • Place the meatballs back into the pan. Let them simmer for 6 to 8 minutes until fully cooked and the sauce thickens slightly. Serve the meatballs in small bowls or plates and garnish with chopped parsley before serving.
