Savory meatball sub - elevate your chef skills and impress everyone!
Ingredients:
  • 400g pork and veal mince
  • 2 garlic cloves, crushed
  • 62.50 ml dried breadcrumbs
  • 1 egg, lightly beaten
  • 1/2 tsp dried mixed herbs
  • 18.20 gm olive oil
  • 2 green onions, thinly sliced
  • 1 small carrot, peeled, finely grated
  • 1 celery stalk, finely chopped
  • 250.00 ml tomato passata
  • 2.50 gm caster sugar
  • 4 hot dog rolls, split, toasted
  • 82.50 ml reduced-fat grated tasty cheese
Instructions:
  • In a bowl, mix together the mince, garlic, breadcrumbs, egg, and dried herbs. Season with pepper. Roll the mince mixture into balls using 2 teaspoons at a time and place them on a plate.
  • In a large non-stick frying pan with lid, heat 1 teaspoon of oil over medium-high heat. Brown the meatballs in batches for 4 minutes. Transfer to a plate and cover to keep warm.
  • Turn down the heat to medium-low then pour the rest of the oil into the pan. Throw in the onion, carrot, and celery, and cook while stirring occasionally for 8 minutes until the veggies begin to soften. Mix in the passata and sugar, then season with salt and pepper. Stir well and let it simmer for 2 minutes until slightly thickened. Add the meatballs back to the pan, give it a good stir, cover, and let it simmer for 5 more minutes until the meatballs are fully cooked.
  • Divide the mixture evenly among the rolls and sprinkle with cheese before serving.
