Indulge in comforting meatball subs with homemade meatballs, sauce, and provolone on a hoagie roll.
Ingredients:
  • For the meatballs
  • 1/3 cup whole milk, warmed
  • 1 slice white bread, crumbled
  • 1 pound ground beef
  • 1/4 cup Parmesan cheese
  • 1 large egg
  • 1/2 tablespoon fresh chopped parsley
  • 1/2 teaspoon dried oregano
  • 1 cup Italian breadcrumbs, for coating
  • 1/3 cup olive oil, for searing
  • 24 ounces good quality marinara sauce
  • For the subs:
  • 4 large hoagie rolls, 6 to 8 inches long
  • 1 tablespoon butter or olive oil
  • 8 slices provolone cheese
  • Fresh basil, for garnish
  • Banana peppers, for garnish (optional)
Instructions:
  • In a large bowl, combine warm milk and crumbled bread; let soak briefly. Add ground beef, Parmesan cheese, egg, parsley, salt, and oregano. Mix by hand until combined, leaving some bread chunks for texture.
  • Shape the meatballs: With moistened hands, form the mixture into approximately 16 uniform meatballs, each weighing about 1 ounce and measuring 1 1/2 inches in diameter. Roll each meatball in breadcrumbs and place on a baking sheet as you shape the remaining meatballs.
  • Sear the meatballs: Heat olive oil in a large skillet over medium heat until shimmering. Cook the meatballs for a few minutes on each side until seared. Transfer the seared meatballs to a medium saucepan and pour in the marinara sauce.
  • Simmer the meatballs: Heat the saucepan over medium heat until it simmers. If needed, stir in up to 1 cup of water to adjust the marinara sauce consistency. Reduce heat to low, cover with a slightly ajar lid to release some steam. Simmer for about 30 minutes until meatballs are cooked and sauce thickens.
  • Prepare and bake the meatball subs: Begin by preheating the oven to 450˚F. Heat a skillet or griddle over medium-high heat. Slice the hoagie rolls down the center with a bread knife, keeping the two sides attached, and open them up like a book. Toast the hoagie rolls in the skillet with a bit of butter or oil until golden brown, approximately 2 minutes each. You may need to toast them in batches depending on the skillet size. Cut 4 meatballs in half from the marinara sauce and place them on a toasted hoagie. Spoon about 1/2 cup of sauce over the meatballs and top with 2 slices of provolone cheese. Repeat this process with the remaining rolls and meatballs. Bake the assembled hoagies until the cheese has melted completely, around 5 minutes.
