Indulgent meatball sub bites with buttery biscuits, gooey cheese, and savory tomato sauce, all baked to perfection in a muffin pan. A quick and easy snack made with premade ingredients, perfect for any occasion or as an after-school treat for the kids.
Ingredients:
  • 1 can (16 oz) refrigerated Immaculate Baking Co.™ Organic Flaky Biscuits (8 Count)
  • 1 cup shredded mozzarella cheese (4 oz)
  • 1/3 cup marinara sauce (from 24-oz jar)
  • 16 frozen Italian-style beef meatballs (1/2 oz each), thawed
  • 3 tablespoons shredded Parmesan cheese
Instructions:
  • Preheat your oven to 350°F and generously coat 16 regular-size muffin cups with cooking spray.
  • Divide the dough into 8 biscuits, then carefully split each biscuit into 2 layers. Gently press the biscuit halves into greased muffin cups, ensuring they cover the bottom and slightly reach up the sides.
  • Top each biscuit-lined cup with a generous sprinkle of 1 tablespoon mozzarella cheese followed by a dollop of 1 teaspoon marinara sauce.
  • Gently nestle a meatball into the luscious sauce and cheese mixture in every cup, then sprinkle each meatball with a generous pinch of Parmesan cheese.
  • Bake for 18 to 22 minutes until the biscuits are a deep golden brown and the meatballs are hot (at least 165°F in center). Allow to cool for 5 minutes in the pan, then remove using a metal spatula.
