Sausage meatballs with cauliflower and roast potatoes create a flavorful one-pan family dinner.
Ingredients:
  • 400g beef sausages (skinless)
  • 600g cauliflower florets
  • 400g medley baby tomatoes
  • 1 red capsicum, thickly sliced
  • 1 large brown onion, cut into wedges
  • 56.88 gm extra virgin olive oil
  • 65.63 gm lemon juice
  • 800g pkt Roast Potatoes Traditional
  • Basil leaves, to serve
Instructions:
  • Preheat your oven to 220C (200C fan-forced) and place 2 large baking trays inside to heat up.
  • 1. Shape sausage meat into walnut-size balls. Combine with cauliflower, tomatoes, capsicum, onion, oil, and juice in a large bowl. Season and toss to coat evenly. Place potatoes and all ingredients except tomatoes on hot trays. Roast for 10 minutes, then add tomatoes and roast for another 25 minutes or until golden. Serve topped with fresh basil.
