Wholesome couscous salad with juicy meatballs, perfect for a light and gluten-free meal that's full of flavor. Great for the whole family!
Ingredients:
  • 800g extra-lean beef mince
  • 10.20 gm beef style stock powder
  • 2 tsp garlic pepper steak seasoning
  • 250.00 ml couscous
  • 415.00 gm boiling water
  • olive oil cooking spray
  • 400g can chickpeas, drained, rinsed
  • 125.00 ml mint leaves, chopped
  • 62.50 ml flat-leaf parsley leaves, coarsely chopped
  • 1 lemon, rind finely grated, juiced
  • 125.00 ml raisins, finely chopped
  • 2 roma tomatoes, finely chopped
  • 82.50 ml fat-free natural yoghurt
Instructions:
  • In a large bowl, blend the mince, stock powder, and steak seasoning until thoroughly combined. Form the mixture into tablespoon-sized balls.
  • In a large heatproof bowl, place couscous and cover with boiling water. Let it stand covered for 3 to 4 minutes until the liquid is absorbed. Fluff the couscous with a fork to separate the grains.
  • Preheat a spacious non-stick pan over medium heat. Lightly coat the meatballs with oil and cook, flipping frequently, for 10 to 15 minutes until they are golden brown and fully cooked.
  • In a separate bowl, mix chickpeas, mint, parsley, lemon rind, 2 tablespoons lemon juice, onion, raisins, and tomatoes with the couscous. Season with salt and pepper, then spoon the flavorful couscous salad into bowls. Top with meatballs, a dollop of yoghurt, and another dash of pepper. Serve and enjoy!
