Ingredients:
  • 500g lean lamb mince
  • 250.00 ml fresh breadcrumbs
  • 1 large apple, grated
  • 2 tsp dried oregano
  • 82.50 ml fresh flat-leaf parsley leaves, chopped
  • olive oil cooking spray
  • 382.50 gm chicken style liquid stock
  • 375.00 ml couscous
  • 1 lemon, rind finely grated
  • 60g marinated red capsicum, chopped
  • 165.00 ml low-fat yoghurt, to serve
Instructions:
  • Preheat your oven to 180°C and prepare 2 baking trays by lining them with baking paper.
  • In a bowl, thoroughly combine ground meat, egg, breadcrumbs, apple, oregano, half of the parsley, salt, and pepper. Make sure everything is well mixed.
  • Form balls using a tablespoon of mince mixture, place in a single layer on baking trays, spray with oil, and bake at 350°F for 20 minutes. Ensure to switch trays halfway through baking until meatballs are cooked through.
  • Heat up the stock in a saucepan until it boils. Remove from heat, then stir in the couscous. Cover it and let it sit for 5 minutes until the stock is absorbed. Use a fork to fluff the couscous grains, then mix in the rind and remaining parsley. Serve the meatballs with the couscous, capsicum, and a dollop of yogurt.
