Kid-friendly meatloaf cupcakes topped with mashed potato icing.
Ingredients:
  • 1 pound ground beef
  • 1 cup crushed saltine crackers
  • 0.5 cup chopped onion
  • 0.5 cup chopped green bell pepper
  • 0.33333334326744 cup milk
  • 1 egg
  • 1 tablespoon Worcestershire sauce
  • 2 cloves garlic, chopped
  • 1 teaspoon seasoned salt
  • 0.5 cup ketchup
  • 0.5 cup brown sugar
  • 4 cups mashed potatoes
  • 1 cup shredded Cheddar cheese
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C).
  • Combine ground beef, crushed saltine crackers, diced onion, chopped green bell pepper, milk, egg, Worcestershire sauce, minced garlic, black pepper, and seasoned salt in a bowl.
  • Combine the ketchup and brown sugar in a bowl, then distribute the mixture evenly into the bottoms of the 6 muffin cups.
  • Spoon beef mixture into muffin cups, ensuring a 1/2-inch gap at the top.
  • Cook in the preheated oven for approximately 30 minutes until fully cooked, registering at least 160°F (70°C) with an instant-read thermometer. Remove excess fat from muffin cups before serving.
  • Generously crown each 'cupcake' with velvety mashed potatoes and savory Cheddar cheese.
  • Bake until the cheese is gooey and bubbling, for approximately 10 minutes.
