Meatloaf with BBQ sauce

Ingredients:
  • 500g sausage mince
  • 500g beef mince
  • 250.00 ml dried breadcrumbs
  • 2 onions, chopped
  • 5.00 gm curry powder
  • Salt and pepper, to taste
  • 20.00 ml chopped parsley
  • 1 egg, beaten lightly
  • 128.75 gm milk
  • 250.00 gm water
  • 130.00 gm tomato sauce
  • 76.25 gm Worcestershire sauce
  • 40.00 ml white vinegar
  • 45.00 gm brown sugar
  • 1 tsp Instant Coffee Powder
  • 30g butter
  • 42.00 gm lemon juice
Instructions:
  • Preheat your oven to 180 degrees Celsius for the perfect bake.
  • Mix together sausage, mince, breadcrumbs, onions, curry powder, salt, pepper, parsley, and egg in a bowl using your hands until mixture is smooth. Adjust consistency by adding milk and water as needed.
  • Form the meat mixture into a loaf shape and place it in a greased baking dish or loaf tin. Bake in a preheated moderate oven for 30 minutes.
  • Prepare the barbecue sauce by mixing all ingredients in a saucepan. Bring to a gentle boil, then lower the heat and simmer for 5 minutes.
  • Once the meatloaf is out of the oven, gently drain any excess fat. Thoroughly coat the meatloaf with BBQ Sauce, then bake for an additional 45 minutes, basting regularly with the sauce.
