Instant Pot® Cheddar cheese meatloaf with BBQ sauce crust - a cheesy twist on a classic favorite.
Ingredients:
  • 0.5 pound ground beef
  • 0.5 cup panko bread crumbs
  • 0.25 cup 1% milk
  • 2 ounces shredded sharp Cheddar cheese
  • 1 small egg
  • 0.5 (1 ounce) package dry onion soup mix (such as Lipton®)
  • 2 tablespoons barbecue sauce
Instructions:
  • Mix ground beef, bread crumbs, milk, Cheddar cheese, egg, and dry onion soup mix in a bowl until fully combined. Shape the mixture into a loaf on a cutting board.
  • In your multi-functional pressure cooker, place a trivet followed by pouring in 1/2 cup of water. Place the loaf on top of the trivet, then close and lock the lid. Set the pressure to high following the manufacturer's instructions and adjust the timer to 15 minutes. Give it 10 to 15 minutes to build up pressure.
  • Carefully release pressure using the quick-release method following manufacturer's instructions, then unlock and remove the lid after about 5 minutes.
  • Position an oven rack 6 inches below the heat source and preheat the broiler.
  • Place the trivet onto a rimmed baking sheet gently. Brush the meatloaf with barbecue sauce, then broil for 3 to 4 minutes. Let it rest for 5 minutes before slicing.
