Meatloaf Muffins with BBQ Sauce

Spicy salsa and tangy BBQ sauce elevate these mini meatloaf muffins with a flavorful glaze.
Ingredients:
  • 1 teaspoon vegetable oil, or as needed
  • 1 medium onion, cut into chunks
  • 1 medium green bell pepper, cut into large chunks
  • 1 large egg
  • 0.5 teaspoon milk
  • 1 cup barbecue sauce
  • 0.5 cup tomato salsa
  • 1 tablespoon Worcestershire Sauce
  • 1.75 pounds ground sirloin
  • 1 cup plain bread crumbs
  • 2 tablespoons grill seasoning (such as McCormick® Grill Mates® Montreal Steak Seasoning)
Instructions:
  • Preheat your oven to a toasty 450 degrees F (230 degrees C) and grease a 12-cup muffin tin with vegetable oil.
  • In a food processor, blend the onion and bell pepper until finely chopped.
  • In a small bowl, vigorously whisk together the egg and milk. In a separate bowl, combine the barbecue sauce, salsa, and Worcestershire sauce.
  • In a large bowl, mix together ground sirloin, onion-pepper mixture, bread crumbs, and steak seasoning. Add the egg mixture and half of the barbecue mixture. Use your hands to combine everything thoroughly.
  • Scoop the meat mixture into the muffin cups and top each with a spoonful of barbecue mixture.
  • Roast in the warm oven until fully cooked through, approximately 20 minutes. Ensure meat reaches an internal temperature of at least 160°F (70°C) when tested with a thermometer.
