Savory mini meatloaf muffins made with ground turkey, veal, bacon, and flavorful seasonings, topped with barbecue sauce and smothered in rich brown gravy.
Ingredients:
  • 3 slices thick-cut bacon, chopped
  • 1 sweet onion, minced
  • 2.5 pounds ground turkey
  • 1 pound ground veal
  • 2 cups dry bread crumbs
  • 0.5 cup milk
  • 2 eggs
  • 0.33333334326744 cup steak sauce
  • 2 tablespoons light brown sugar
  • 1 tablespoon garlic powder
  • 1 tablespoon dried basil
  • 1 tablespoon dry ground mustard
  • 1.5 teaspoons ground black pepper
  • 1.5 teaspoons sea salt
  • 1.5 teaspoons crumbled dried sage
  • 0.5 cup barbecue sauce
  • 2 (.75 ounce) packets dry brown gravy mix
  • 2 cups water
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C, then generously coat 2 12-cup muffin pans with cooking spray.
  • In a skillet over medium-high heat, sauté the chopped bacon and onion until the onions are translucent and the bacon is halfway cooked, approximately 5 minutes. Remember to drain any excess fat before proceeding.
  • Transfer the bacon mixture to a large bowl, then add in the turkey, veal, bread crumbs, milk, eggs, steak sauce, brown sugar, garlic powder, basil, ground mustard, cumin, black pepper, sea salt, and sage. Mix everything thoroughly. Fill the greased muffin cups with the meatloaf mixture, and create a hole in the center of each muffin using your pinky finger to ensure even cooking.
  • Cook in the oven until the juices run clear and the internal temperature reaches at least 160°F (70°C), about 30 minutes. Brush each muffin with barbecue sauce, then bake for an extra 5 minutes.
  • Combine brown gravy mix and water in a saucepan and whisk over medium heat until boiling. Simmer until thickened, around 1 minute. Serve by placing muffins in a deep dish and pouring the gravy over them.
