Impressive platter featuring Portuguese chicken, chimichurri lamb, and gourmet deli items for effortless entertaining.
Ingredients:
  • Crusty sourdough bread, sliced
  • 60ml (1/4 cup) olive oil
  • 10.00 gm Portuguese chicken seasoning
  • 4.00 garlic cloves, crushed
  • 1 lemon, rind finely grated, juiced
  • 750g chicken wing nibbles, trimmed
  • 1 bunch fresh continental parsley, leaves picked
  • 1/2 bunch fresh coriander, leaves picked
  • 1 bunch fresh chives, chopped
  • 3 tsp red wine vinegar
  • 1/2 tsp chilli flakes
  • 80ml (1/3 cup) extra virgin olive oil
  • 8 lamb cutlets, frenched
Instructions:
  • Preheat your oven to 200C/180C fan forced. Grease a baking tray and line with baking paper. Mix oil, Portuguese seasoning, garlic, lemon rind, and 1 tablespoon lemon juice in a glass or ceramic dish. Season. Add chicken and coat well. Let it marinate for 30 minutes.
  • Lay out the chicken in a single layer on the tray. Bake for 30-40 minutes, turning occasionally, until the chicken is fully cooked.
  • Prepare the chimichurri by blending parsley, coriander, chives, garlic, vinegar, and chili flakes until finely chopped. Slowly drizzle in olive oil until mixture is fully combined. Season generously.
  • Season the lamb generously. Preheat a barbecue or chargrill plate over medium-high heat and spray with oil. Grill the lamb for 2-3 minutes on each side for medium rare perfection. Rest the lamb on a plate, covered, for 5 minutes before serving with your favorite sauce.
