Transform baguettes into quick pizza crusts, customize with your favorite toppings for a simple yet delectable weeknight meal.
Ingredients:
  • 1 40-50cm baguette (French stick)
  • 36.40 gm olive oil, for brushing
  • 44.40 gm sun-dried tomato paste
  • 1 340g jar marinated artichoke quarters, drained
  • 6 bocconcini cheese, quartered
  • 4 thin prosciutto slices, cut into strips
  • 2 tsp fresh thyme leaves Thyme sprigs, to garnish
Instructions:
  • Preheat your oven to 200°C.
  • Slice the baguette in half lengthwise and delicately hollow out the inside, leaving a 1 cm-thick shell. (Save the removed bread for breadcrumbs if preferred.)
  • Coat the inside of the baguette shell with a mixture of olive oil and garlic. Spread sun-dried tomato paste evenly inside the shell, then layer with artichoke pieces, bocconcini, and prosciutto. Sprinkle thyme leaves on top.
  • Wrap each baguette half gently in non-stick baking paper, folding the long edges and twisting the ends to seal. Place on a large baking tray and bake in a preheated oven for 15-20 minutes or until heated through. Unwrap, slice into portions, and serve promptly, garnished with fresh thyme sprigs.
