Quick and delicious Mediterranean potato salad, ready in 25 minutes, perfect for meatless meals.
Ingredients:
  • 1 1/2 lb medium red potatoes, cut in half
  • 3 slices bacon
  • 3/4 cup red or yellow grape tomatoes
  • 1/4 cup chopped onion
  • 1/4 cup sliced ripe olives
  • 1/2 cup fat-free Italian dressing
  • 1 tablespoon cider vinegar
  • 1 tablespoon chopped fresh Italian parsley, if desired
Instructions:
  • In a 3-quart saucepan, bring 1 inch of water to a boil. Add the potatoes, cover, and simmer gently for 10 to 15 minutes until tender. Drain and cool slightly. Cut the potatoes into 3/4-inch cubes and transfer to a large bowl.
  • Line a microwavable plate with a paper towel, lay the bacon on top, cover it with another paper towel, and microwave on High for 2 to 3 minutes until crisp. Crumble the bacon.
  • Combine the bacon, tomatoes, onion, and olives with warm cubed potatoes. In a small bowl, whisk together the dressing and vinegar, then drizzle over the potato mixture, gently tossing to coat the vegetables. Garnish with parsley and serve either warm or chilled.
