Mediterranean potato salad

Elevate your salads with this flavorful Mediterranean potato side dish.
Ingredients:
  • 1kg (4 large) Cream Delight potatoes, unpeeled
  • 150g pancetta, cut into thin strips
  • 180g bought chargrilled capsicum, rinsed, cut into thin strips
  • 1 red onion, halved, thinly sliced
  • 80ml (1/3 cup) red wine vinegar
  • 160g (2/3 cup) Whole Egg Mayonnaise
  • 60g pkt baby spinach leaves
Instructions:
  • Boil the potatoes in a large saucepan of water for 30 minutes until tender, then drain and let cool for 10 minutes. Gently break the potatoes into large pieces.
  • Cook the pancetta in a non-stick pan, stirring occasionally, until crisp, about 5 minutes.
  • In a bowl, mix together the potato, pancetta, capsicum, and onion. Season with salt and pepper, then add the vinegar and mix well. Let it sit for 10 minutes to cool slightly before gently folding in the mayonnaise. Finally, toss in the spinach leaves until well combined.
