Elevate your potato salad with red potatoes and zesty lemon dressing for a refreshing twist on a classic dish.
Ingredients:
  • 2 pounds potatoes
  • 1 green bell pepper, minced
  • 1 cucumber, sliced and quartered
  • 0.5 cup sliced red onion
  • 8 ounces crumbled feta cheese
  • 1 lemon, juiced
  • 0.5 cup Italian-style salad dressing
  • salt and pepper to taste
  • 3 pita breads, cut into wedges
Instructions:
  • 1. Boil a pot of generously salted water. Cook potatoes until tender yet slightly firm, approximately 15 minutes. Drain, cool, and chop.
  • Mix together potatoes, green peppers, cucumbers, red onion, and cheese in a generous bowl.
  • Combine fresh lemon juice, your favorite salad dressing, a pinch of salt, and a dash of pepper in a bowl. Drizzle the mixture over the salad and gently mix until everything is evenly coated. Optionally, serve with pita bread wedges for a delightful crunch.
