Savor the flavors of the Mediterranean with garlicky basil, sun-dried tomato, and feta stuffed chicken wrapped in flaky puff pastry.
Ingredients:
  • 3 tablespoons crushed garlic
  • 2 cups chopped fresh spinach
  • 2 boneless skinless chicken breast halves
  • 2 tablespoons basil pesto
  • 0.33333334326744 cup chopped sun-dried tomatoes
  • 0.25 cup crumbled herbed feta cheese
  • 1 frozen puff pastry sheet, thawed, cut in half
Instructions:
  • Mix crushed garlic and egg yolk in a small bowl. Coat chicken breasts on both sides with the egg mixture. Cover the dish with plastic wrap and refrigerate for 4 hours or overnight for optimal flavor.
  • Preheat your oven to a toasty 375 degrees F (190 degrees C) and generously grease a baking sheet.
  • Lay half of the puff pastry sheet on a floured surface. Add 1/2 cup spinach in the middle. Take out a piece of chicken from the marinade, let excess drip off, and put it on the spinach. Spread 1 tablespoon pesto over the chicken, top with half of the sun-dried tomatoes, sprinkle with half of the feta cheese, and another 1/2 cup spinach. Enclose the chicken by wrapping the pastry sheet around it, sealing the seam with your fingers or a fork. Place the chicken seam side down on a baking sheet. Repeat with the second half of the pastry sheet and the remaining chicken breast.
  • Bake for 35 to 40 minutes until the chicken breast is fully cooked; check by cutting through the center and ensuring the juices run clear.
