Mediterranean Quick Pizza

Award-winning Mediterranean Quick Pizza recipe by Elaine Mason of Oconomowoc, WI.
Ingredients:
  • 1 1/2 cups Original Bisquick™ mix
  • 1/3 cup very hot water
  • 1 tablespoon extra-virgin olive oil
  • 1/2 cup red wine vinegar
  • 3 cloves garlic, finely chopped
  • 1 tablespoon dried basil leaves
  • 1 teaspoon dried oregano leaves
  • 3 tablespoons fresh lemon juice
  • 3/4 cup extra-virgin olive oil
  • 2 packages (8 oz each) cream cheese, softened
  • 1/2 cup diced sun-dried tomatoes in oil (from 8-oz can)
  • 1 cup chopped tomato
  • 1 cup chopped cucumber
  • 1/4 cup chopped red onion
  • 1/4 cup sliced pitted kalamata olives
  • 1 cup chopped fresh spinach
  • 1/2 cup crumbled feta cheese
Instructions:
  • Preheat the oven to 400°F and generously spray a 12-inch pizza pan with cooking spray. Mix the Crust ingredients in a medium bowl until a soft dough forms. Press the dough into the pizza pan, shaping a crust around the edge. Use a fork to prick the dough to prevent puffing.
  • Bake for 12 to 16 minutes, or until the crust turns golden. Let it cool for 10 minutes. In a medium bowl, whisk together the Greek Vinaigrette Dressing ingredients until well blended. Set aside.
  • Combine cream cheese with sun-dried tomatoes in a medium bowl, then spread it on the pizza crust. Add tomato, cucumber, onion, olives, and spinach on top. In a separate small bowl, mix 1/4 cup of dressing with feta cheese; spoon over the pizza. Refrigerate any leftover dressing for later use.
