Mediterranean-inspired chicken and spaghetti squash dish with Parmesan and artichokes - a delicious family meal.
Ingredients:
  • 1 spaghetti squash, halved
  • 1 cup water
  • 2 tablespoons olive oil, divided
  • 1 pound chicken tenders, cut into bite-sized pieces
  • 1 sweet onion, chopped
  • 6 cloves garlic, chopped
  • 1 teaspoon hot sauce, or to taste
  • 1 (15 ounce) can artichoke hearts, drained and chopped
  • 0.5 red bell pepper, chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.5 teaspoon dried thyme
  • 1 cup grated Parmesan cheese
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect cooking temperature.
  • Lay the spaghetti squash cut-side down in a baking pan and pour water around it.
  • Bake in the oven until fork-tender, around 45 minutes. Let cool for 5 to 10 minutes, then remove and discard the seeds. Use a fork to scrape the flesh into strands.
  • In a large skillet over medium heat, heat a flavorful tablespoon of olive oil. Add the chicken and let it sizzle until golden brown on each side, about 3 minutes per side.
  • In a saucepan over medium heat, sauté onion, garlic, and hot sauce in 1 tablespoon olive oil until softened, about 5 minutes. Then add squash strands, artichoke hearts, and red bell pepper. Season with oregano, basil, and thyme.
  • Add the chicken and Parmesan cheese to the saucepan. Cover and simmer on low heat, stirring occasionally, to blend the flavors for about 5 minutes.
