Savor Mediterranean beef wraps with Tabbouleh, sweet potato, and hommus.
Ingredients:
  • 500g pkt Sweet Potato Chips
  • 500g Beef 5 Star Mince
  • 1 small brown onion, finely chopped
  • 1 garlic clove, crushed
  • 20.00 ml finely chopped mint leaves
  • 70g fetta, crumbled
  • 4 white soft wraps
  • 200g hommus dip
  • 60g pkt Baby Spinach
  • 500.00 ml Deli Quinoa & Tabouleh Salad
  • Greek-style yoghurt, to serve
Instructions:
  • Preheat your oven to 180°C and line a large baking tray with parchment paper. In a spacious bowl, mix sweet potato chips with oil until coated evenly. Spread the sweet potato on the baking tray in a single layer. Bake for 35 minutes or until tender and heated through, flipping halfway through.
  • Combine beef, onion, garlic, mint, and fetta in a large bowl until fully mixed. Divide mixture into 8 portions and shape each into a sausage. Preheat greased barbecue grill or chargrill to medium heat, spray sausages with olive oil, and cook for 8-10 mins, turning occasionally until cooked through. Rest under foil for 5 mins before serving.
  • Arrange the wraps on individual serving plates. Spread a generous layer of hummus on each wrap. Top with spinach, tabouleh salad, sausages, and half of the sweet potato chips. Season to taste. Serve with yogurt and the rest of the sweet potato chips.
