Slow cook Mediterranean lamb shanks until tender and flavorful.
Ingredients:
  • 4 large (about 1.5kg) lamb shanks, trimmed
  • 40.00 ml plain flour
  • 1 large red onion, chopped
  • 2 garlic cloves, thinly sliced
  • 2 medium red capsicum, cut into 3cm pieces
  • 2 medium zucchini, halved, thickly sliced
  • 350g eggplant
  • 2 sticks celery, thickly sliced
  • 2 x 440g cans chopped tomatoes
  • 44.40 gm tomato paste
  • 125ml red wine
  • 250ml beef stock
  • 40.00 ml fresh oregano, chopped
  • 62.50 ml fresh basil, shredded
  • Mashed potato or cooked pasta, to serve
  • Salt, to season
Instructions:
  • In a bowl, combine lamb with flour and toss to coat. Heat oil in a large non-stick frying pan over medium-high heat. Brown the lamb all over for 5 to 6 minutes, then transfer to a slow cooker. In the same pan, cook onion, garlic, capsicum, zucchini, eggplant, and celery for 5 minutes until vegetables start to brown.
  • Place the lamb in the slow cooker. Sprinkle with chopped tomatoes. Mix tomato paste, wine, and stock together, then pour over the lamb. Cook on low for 6-7 hours with the lid on.
  • When ready to enjoy, gently mix in fragrant oregano and basil, then season generously with salt and pepper. Serve the succulent lamb shanks atop a bed of creamy mashed potatoes or perfectly cooked pasta.
