Mouthwatering Mediterranean-style lamb meatballs bursting with aromatic cinnamon and fresh mint flavors.
Ingredients:
  • 0.5 cup dry bread crumbs
  • 1.25 pounds ground lamb
  • 3 cloves fresh garlic, minced
  • 1 tablespoon tomato paste
  • 1 tablespoon chopped fresh rosemary
  • 1 tablespoon ground cumin
  • 1.5 teaspoons salt
  • 1 teaspoon dried oregano
  • 0.5 teaspoon freshly ground black pepper
  • 0.25 teaspoon ground cinnamon
  • 1 pinch cayenne pepper
  • 3 cups tomato sauce
  • 1 cup chicken stock
  • 2 tablespoons chopped fresh mint
  • 1 pinch red pepper flakes, or to taste
Instructions:
  • Preheat the oven to a high temperature of 450 degrees F (230 degrees C) to ensure the perfect cooking environment.
  • Prepare the baking sheet by lining it with aluminum foil and lightly greasing it.
  • Mix bread crumbs and milk in a small bowl until the bread crumbs are soaked and the milk is absorbed, approximately 30 minutes.
  • In a large bowl, mix together the bread crumb mixture, lamb, egg, garlic, olive oil, tomato paste, rosemary, cumin, salt, oregano, black pepper, cinnamon, and cayenne pepper.
  • Shape the lamb mixture into 2-inch meatballs and arrange them on the baking sheet.
  • Bake meatballs in the oven until they turn a delicious golden brown, approximately 15 minutes. Take them out of the oven and keep aside.
  • Simmer meatballs, tomato sauce, chicken stock, fresh mint, and red pepper flakes in a large saucepan over medium heat for 45 minutes, until meatballs are cooked through.
