Mediterranean-Style Herbed Tilapia

Create a Mediterranean masterpiece by baking tilapia fillets coated in Fiber One™ original bran cereal mixture with Italian seasoning.
Ingredients:
  • 1 1/2 lb tilapia fillets (3/4 inch thick)
  • 1 cup Fiber One™ original bran cereal
  • 2 tablespoons grated Parmesan cheese
  • 2 teaspoons Italian seasoning
  • 1 tablespoon water
  • Cooking spray
  • 1/4 cup crumbled feta cheese
  • 1 can (14.5 oz) diced tomatoes with basil, garlic and oregano, undrained
  • 1/2 cup sliced pitted kalamata olives (about 20 olives)
  • 1 teaspoon cornstarch
Instructions:
  • Preheat oven to 400°F and generously spray a rimmed cookie sheet with cooking spray. Cut tilapia into 6 serving pieces. Place cereal in a resealable plastic bag and crush finely using a rolling pin, meat mallet, or food processor.
  • Combine cereal, Parmesan cheese, and Italian seasoning in one bowl. In a separate bowl, whisk together egg white and water. Dip fish pieces in egg white, then coat with the cereal mixture before placing in a baking pan. Lightly spray each fillet with cooking spray.
  • Bake until fish easily flakes with a fork, about 10-15 minutes.
  • In a 2-quart saucepan, bring sauce ingredients to a boil, then simmer for about 10 minutes until the mixture thickens and the flavors meld together.
  • Drizzle each fillet with a generous 3 tablespoons of sauce and a sprinkle of cheese before serving.
