Indulgent recipe for extra-large, perfect biscuits.
Ingredients:
  • 200.00 gm rolled oats
  • 1000.00 ml Cornflakes
  • 170.00 gm desiccated coconut
  • 430.00 gm caster sugar
  • 375.00 ml plain flour, sifted
  • 340.00 gm sultanas
  • 250g butter, roughly chopped
  • 167.50 gm golden syrup
  • 5.00 gm bicarbonate of soda
  • 82.50 gm boiling water
Instructions:
  • Preheat your oven to 180°C. Line 4 baking trays with parchment paper and draw six 12cm circles on each sheet, spacing them out well. Place the paper circle-side down on the trays.
  • In a large bowl, mix together oats, Cornflakes, coconut, sugar, flour, and sultanas.
  • In a small saucepan over low heat, melt together butter, golden syrup, bicarbonate of soda, and water for 4 minutes until the mixture is smooth. Then, combine the butter mixture with the dry ingredients and mix thoroughly.
  • Using your hands, form 1/2 cupfuls of mixture into rounds on baking trays, following the pencil marks as a guide. Bake for 12 to 15 minutes until golden brown. Allow them to cool completely on the trays.
