Mega chocolate fudge cake

Indulge in a decadent chocolate cake made effortlessly in the food processor for a sweet treat.
Ingredients:
  • 200 g quality dark chocolate (70%)
  • 175 g unsalted butter plus extra for greasing
  • 120 g soft brown sugar
  • 100 g blanched almonds
  • 2 tablespoons cocoa powder
  • 4 large free-range eggs
  • 150 g self-raising flour
  • 100 g fudge
  • crème fraîche or vanilla ice cream
Instructions:
  • Preheat the oven to 160°C/320°F/gas 2. Combine chocolate, butter, sugar, almonds, 1 tablespoon cocoa powder, and a pinch of sea salt in a food processor. Blend until smooth. Add eggs one at a time and then flour, blend until smooth. Butter a 25 x 25cm baking dish and sprinkle with cocoa powder. Pour cake mixture into dish, top with fudge pieces and bake for 18 to 20 minutes. Check doneness with a fork. Let cool slightly and serve warm with crème fraîche, vanilla ice cream, or double cream.
