Indulge in decadent chocolate chip muffins, a timeless favorite.
Ingredients:
  • Cooking spray (or 12 paper baking cups)
  • 1/2 cup (1 stick) margarine or butter
  • 2 eggs
  • 1 cup milk
  • 2 cups all-purpose flour
  • 3/4 cup packed brown sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 cup semisweet chocolate chips
Instructions:
  • Preheat your oven to 400°F. Grease each muffin cup generously with cooking spray or line them with paper baking cups for easy removal later. Set the prepared muffin pan aside for use in the next step.
  • Place the margarine in a saucepan and melt over low heat, stirring occasionally with a wooden spoon for about 1 minute. Remove the saucepan from the heat. Alternatively, melt the margarine in a microwavable bowl covered with waxed paper on High for 30 to 45 seconds. Let it cool for 5 minutes.
  • Crack the eggs into a small mixing bowl and add melted margarine and milk. Beat with a fork until well combined.
  • Combine the flour, brown sugar, baking powder, and salt in a large mixing bowl, using a wooden spoon to mix everything together. Pour the milk mixture into the dry ingredients and stir until just combined (it's okay if there are still some lumps). Gently fold in the chocolate chips. Fill the sprayed muffin cups about 2/3 full with the batter.
  • Bake until the muffins are beautifully golden brown and a toothpick inserted in the center comes out clean, about 18 to 20 minutes.
  • 1. Use pot holders to carefully remove the muffin pan from the oven. 2. Gently tilt the pan to release the muffins, then place them on a wire cooling rack. 3. Allow the muffins to cool on the rack for 10 minutes before serving.
