Spice up your spaghetti bolognese with bold chorizo and bacon for a flavorful twist.
Ingredients:
  • 36.40 gm extra virgin olive oil, plus extra to serve
  • 1kg beef mince
  • 1 chorizo sausage, finely chopped
  • 5 middle bacon rashers, trimmed, finely chopped
  • 4 garlic cloves, crushed
  • 1/2 long red chilli, finely chopped
  • 2 small brown onions, finely chopped
  • 200g button mushrooms, sliced
  • 1 carrot, grated
  • 2 celery stalks, finely chopped
  • 1/2 small zucchini, grated
  • 1 tsp dried oregano
  • 5.00 gm mixed spice
  • 32.00 gm brown sugar
  • 0.60 gm salt
  • 1/4 tsp ground black pepper
  • 247.50 gm red wine
  • 44.40 gm tomato paste
  • 255.00 gm beef stock
  • 3 x 400g cans cherry tomatoes in tomato juice
  • 750g packet spaghetti
  • 1 bunch fresh basil, leaves picked
  • 1 avocado, sliced, to serve
  • 125.00 ml grated parmesan, to serve
Instructions:
  • In a large heavy-based saucepan over medium-high heat, heat 1 tablespoon of oil. Add mince and cook for 8 to 10 minutes until browned, breaking it up with a wooden spoon. Add chorizo and bacon, cook for 2 more minutes until browned. Transfer to a bowl and set aside.
  • Heat the rest of the oil in a pan. Sauté garlic, chili, and onion for 5 minutes until the onion is soft. Add mushroom, carrot, celery, and zucchini. Stir and cook for an additional 5 minutes until vegetables start to soften.
  • Add the mince mixture back into the pan. Sprinkle in oregano, mixed spice, brown sugar, salt, and pepper. Mix well. Pour in the wine and let it simmer for 5 minutes until it reduces by half. Stir in tomato paste, stock, and tomatoes. Lower the heat and simmer uncovered for 5 hours, stirring occasionally, until the sauce thickens to perfection.
  • Boil pasta in a large saucepan of salted water according to package instructions until al dente. Drain thoroughly before using.
  • Roughly chop half of the basil leaves and mix into the sauce. Serve the pasta in bowls, topped with bolognese sauce, avocado, and parmesan cheese. Garnish with the remaining basil leaves.
