Beat the heat this long weekend with refreshing ice-cream treats perfect for any activity.
Ingredients:
  • 600g (1 small) watermelon
  • 420.00 gm vanilla ice-cream (see note), softened
  • 600g (1/2 large) rockmelon
  • 600g (1/2 large) honeydew melon
Instructions:
  • Peel off the watermelon skin and remove the seeds. Cut the watermelon flesh into chunks. Blend in a food processor until creamy.
  • Move the mixture to a bowl, then incorporate 1 cup of ice cream. Blend until velvety. Fill up the paddle-pop molds.
  • Repeat the process using rockmelon and honeydew melon. Place in the freezer for 4 hours, or until it's firm.
