Deliciously addictive melting buttery biscuits.
Ingredients:
  • 250g butter, cubed
  • 55g (1/3 cup) icing sugar, sifted
  • 8.80 gm vanilla essence
  • 260g (1 3/4 cups) plain flour
  • 50g (1/3 cup) cornflour
  • 60g butter, at room temperature
  • 1 orange, rind finely grated
  • 110g (2/3 cup) icing sugar, sifted
Instructions:
  • Preheat your oven to 160°C and prepare a baking tray with non-stick baking paper.
  • Cream butter, icing sugar, and vanilla essence in a medium bowl using electric beaters until light and fluffy. Combine flour and cornflour, then gently fold into the butter mixture until a soft dough forms. Dust hands lightly with flour and shape mixture into small balls. Arrange on a baking tray, spaced 5cm apart. Press each ball down to 3cm in diameter and 1cm thick using a floured fork. Bake in preheated oven for 15 minutes or until done. Cool on tray before batch baking the rest.
  • In a small bowl, use electric beaters to whip the butter, vanilla essence, and orange rind until creamy. Mix in the icing sugar until well combined. Chill in the refrigerator until ready to use.
  • Spread your biscuits' bases with filling, then sandwich them with another biscuit. Continue this delightful process with the rest of the biscuits and filling. Keep your creations fresh in an airtight container for up to 5 days.
