Foolproof meringue: Whip egg whites to stiff peaks, carefully mix in cornstarch syrup. Top pies or fill meringue shells for a sweet finale.
Ingredients:
  • 2 tablespoons white sugar
  • 0.5 cup water
  • 3 egg whites
  • 5 tablespoons white sugar
Instructions:
  • Preheat oven to a piping hot 450 degrees F (225 degrees C).
  • Combine 2 tablespoons of sugar and cornstarch in a small saucepan. Whisk in water and cook over medium heat, stirring constantly, until the mixture thickens and turns clear. Remove from heat and let it cool.
  • In a large mixing bowl, whisk together egg whites, salt, and vanilla extract until soft peaks form. Slowly incorporate 5 tablespoons of sugar, beating thoroughly after each addition.
  • Beat the egg whites while slowly pouring in the cornstarch syrup until stiff peaks form.
  • Top the pie with a luscious layer of meringue, or create beautiful shapes on a baking sheet lined with parchment paper using a large pastry tip.
  • Bake until golden brown in a preheated oven for about 12 minutes.
