Create flawless meringue: Whip egg whites to peaks, add hot syrup, use as pie topping or in shells.
Ingredients:
  • 0.5 cup water
  • 2 tablespoons white sugar
  • 1 tablespoon cornstarch
  • 0.25 teaspoon cream of tartar
  • 1 pinch salt
  • 0.5 teaspoon vanilla extract
  • 6 tablespoons white sugar
Instructions:
  • Combine water, sugar, and cornstarch in a small saucepan. Cook over low heat, stirring constantly, until the mixture turns clear. Remove from heat.
  • In a spacious glass or metal bowl, whip egg whites, cream of tartar, and salt until foamy. Incorporate vanilla, then slowly add 6 tablespoons sugar, beating continuously until meringue forms soft peaks. Slowly pour in cornstarch mixture, beating until stiff. Spread over pie and seal to crust. If desired, brown in oven.
