Delicious strawberry meringue layer cake, perfect for summer parties.
Ingredients:
  • 1 (18.25 ounce) package white cake mix
  • 1 egg white
  • 1 cup white sugar
  • 1 cup sliced fresh strawberries
Instructions:
  • Follow the cake mix instructions for three 8-inch round cake pans. Bake as directed on the package, then cool on a wire rack.
  • For the Frosting: In a spacious bowl, whip egg white, sugar, and strawberries on high speed until stiff peaks form, approximately 20 minutes. Use a large bowl as the frosting expands significantly.
  • Assemble the cake by placing one layer on a serving plate, securing it with toothpicks to hold the layers together, and spreading 1/4 of the frosting on top. Repeat with the second layer. Place the third layer on top and frost the entire cake with the remaining frosting.
