Ingredients:
  • 1.75 cups white sugar
  • 1 cup unsalted butter, softened
  • 5 large egg whites
  • 2 cups pureed strawberries
  • 2 teaspoons strawberry extract
  • 3 cups cake flour
  • 1 tablespoon baking powder
  • 1 (8 ounce) package cream cheese, softened
  • 0.25 cup unsalted butter, softened
  • 0.25 cup pureed strawberries
  • 0.5 teaspoon strawberry extract
  • 6.5 cups confectioners' sugar
  • 1 cup sliced fresh strawberries
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously grease and flour three 9-inch cake pans.
  • In a large bowl, cream together the sugar and butter with an electric mixer until fluffy. Gradually add the egg whites one at a time, beating well after each addition. Mix in the pureed strawberries, sour cream, and strawberry extract.
  • Combine sifted cake flour, baking powder, baking soda, and salt in a bowl. Gradually add to the butter mixture, beating until combined. Divide batter evenly among prepared pans.
  • Bake in the preheated oven for 30 to 35 minutes until a toothpick comes out clean. Cool in the pans for 10 minutes, then transfer to wire racks to cool completely for about 30 minutes.
  • Once the cakes are cooling, combine cream cheese and butter in a large bowl. Use an electric mixer on medium speed to blend until smooth. Mix in pureed strawberries and strawberry extract. Slowly incorporate confectioners' sugar until the frosting is smooth.
  • Top the chilled cake layers with a luscious layer of frosting, then elegantly arrange sliced fresh strawberries on top for a delightful finishing touch.
