Indulgent strawberry cream cake with layers of yellow cake, strawberry-infused whipped cream, cream cheese frosting, and fresh strawberries on top.
Ingredients:
  • 2.75 cups cake flour
  • 2.5 teaspoons baking powder
  • 2 cups white sugar
  • 1 (3 ounce) package strawberry flavored Jell-O®
  • 4 eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 0.5 cup strawberries, pureed
  • 1.5 cups heavy cream
  • 2 tablespoons sugar
  • 0.5 teaspoon vanilla extract
  • 1.5 cups fresh strawberries, sliced
  • 0.5 cup margarine, softened
  • 1 (8 ounce) package cream cheese, softened
  • 4 cups confectioners' sugar
  • 2 teaspoons vanilla extract
  • 1.5 cups quartered strawberries
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C), then generously grease and flour three 9-inch round cake pans.
  • In a large bowl, cream together sugar, gelatin, and butter until fluffy. Add eggs one at a time, beating well after each addition. Alternate adding the combined flour and baking powder with the milk into the creamed mixture. Gently fold in 1 teaspoon of vanilla and the pureed strawberries. Divide the batter evenly among three 9-inch round cake pans.
  • Bake in the preheated oven for 25 minutes, or until a toothpick inserted into the cake comes out clean. Allow to cool for 10 minutes in the pans, then remove and cool completely.
  • Prepare the filling by whipping together the whipping cream, 2 tablespoons of sugar, and 1/2 teaspoon of vanilla until stiff peaks form. Use one-third of the whipped cream and 3/4 cup of sliced strawberries to fill each layer.
  • Prepare the frosting by combining margarine, cream cheese, confectioners' sugar, and 2 teaspoons vanilla and beating until creamy. Spread it over the sides of the cake and pipe a decorative edge around the top.
  • Smooth the remaining whipped cream over the top of the cake and garnish with quartered strawberries.
