Neapolitan Nesquik Layer Cake

Indulgent Neapolitan cake with chocolate, strawberry, and banana flavors, topped with cream cheese frosting.
Ingredients:
  • 1.5 cups unsalted butter, at room temperature
  • 6 eggs, at room temperature, separated
  • 1.5 teaspoons vanilla extract
  • 3.5 cups unbleached all-purpose flour
  • 4.5 teaspoons baking powder
  • 2 pinches salt, divided
  • 1.5 cups whole milk, at room temperature
  • 0.5 cup chocolate-flavored milk powder (such as Nesquik®)
  • 0.5 cup strawberry-flavored milk powder (such as Nesquik®)
  • 9 drops red food coloring, or as desired
  • 1 (8 ounce) package cream cheese, at room temperature
  • 0.5 cup unsalted butter, at room temperature
  • 0.5 cup shortening
  • 1 (16 ounce) package confectioners' sugar
Instructions:
  • Preheat the oven to a perfect 350 degrees F (175 degrees C), and generously grease and flour three 9-inch round cake pans.
  • In a bowl, blend sugar and butter together until light and fluffy using an electric mixer for 5 minutes. Gradually add egg yolks one at a time, then mix in vanilla extract.
  • Combine the flour, baking powder, and a pinch of salt in a separate bowl. Gradually add this mixture to the creamed sugar in 3 parts, alternating with milk. Mix well after each addition. Scrape the sides and bottom of the bowl and blend for another minute until the batter is smooth. Divide the batter evenly into 3 mixing bowls, about 2 1/2 cups in each.
  • Whip egg whites and remaining salt in a bowl using a whip attachment until stiff peaks form.
  • Gently combine 1/3 of the fluffy egg whites with the batter in a bowl, then transfer the mixture into a cake pan for the vanilla layer.
  • Gently fold 1/3 of the whipped egg whites and chocolate-flavored milk powder into the batter. Transfer the mixture into a prepared cake pan to create the chocolate layer.
  • Gently incorporate the rest of the whipped egg whites, strawberry-flavored milk powder, and red food coloring into the batter. Transfer to the cake pan for the strawberry layer.
  • Bake cake layers until a toothpick comes out clean, about 25 to 30 minutes. Cool in the pans for 15 minutes, then transfer to a wire rack to cool completely, for 20 to 30 minutes.
  • Cream together cream cheese, butter, and shortening in a bowl until smooth. Add confectioners' sugar, then blend until frosting is smooth.
  • Prepare the chilled cake layers by frosting them and decorating to your liking.
