Neapolitan Shortcake Parfaits

Indulge in a decadent Gold Medal® flour shortcake parfait with impressive layers.
Ingredients:
  • 4 cups sliced fresh strawberries
  • 1/2 cup granulated sugar
  • 2 1/4 cups Gold Medal™ all-purpose flour
  • 3 tablespoons granulated sugar
  • 2 1/2 teaspoons baking powder
  • 3/4 cup milk
  • 1/2 cup butter or margarine, melted
  • 1 bag (6 oz) semisweet chocolate chips (1 cup)
  • 1 tablespoon shortening
  • 1 1/2 cups whipping cream
  • 1/3 cup powdered sugar
  • 1 teaspoon vanilla
  • Additional strawberries, if desired
Instructions:
  • Preheat oven to 425°F and lightly grease a cookie sheet with shortening. In a medium bowl, combine strawberries with 1/2 cup granulated sugar and set aside.
  • In a medium bowl, combine flour, 3 tablespoons of granulated sugar, baking powder, and salt. Stir in milk and butter until a soft dough forms. Scoop the dough onto a cookie sheet using 8 heaping tablespoonfuls. Bake for 10-12 minutes until golden brown. Transfer to a cooling rack and let the shortcakes cool completely.
  • In a small microwave-safe bowl, heat chocolate chips and shortening in the microwave on Medium for 1 to 2 minutes, making sure to stir after 1 minute, until melted.
  • Whip whipping cream, powdered sugar, and vanilla in a chilled medium bowl with an electric mixer on high speed until soft peaks form.
  • Roughly crumble shortcakes. Layer shortcake pieces, strawberries, chocolate mixture, and whipped cream in parfait glasses. Top with extra strawberries for a beautiful finish.
