Ingredients:
  • 250g McVitie’s The Original Digestives biscuits
  • 150g butter, melted
  • 15.00 gm cocoa powder
  • 7.50 gm gelatine powder
  • 500g cream cheese, at room temperature, chopped
  • 100g (1/2 cup) caster sugar
  • 300ml thickened cream
  • 8.80 gm vanilla extract
  • Red food colouring, to tint
Instructions:
  • Prepare a 20 x 30cm slice pan by greasing it and lining it with baking paper, leaving the 2 long sides to hang over the edges. Using a food processor, crush the biscuits into fine crumbs. Add the butter and process until well combined. Press the mixture evenly and firmly into the pan using the back of a spoon. Chill in the fridge for 30 minutes or until set.
  • Prepare a rich cocoa mixture by combining cocoa powder with 2 tablespoons of hot water in a small bowl until smooth. Set aside. In another small microwave-safe bowl, mix 2 tablespoons of water with gelatine and heat in the microwave for 10 seconds without overheating. Whisk with a fork until the gelatine dissolves completely. Let it cool to room temperature.
  • In a large bowl, use electric beaters to blend the cream cheese and sugar until smooth. Add the cream, vanilla, and gelatin mixture. Beat while occasionally scraping down the sides of the bowl with a spatula until combined. Divide the mixture into thirds: stir in cocoa into one third, and mix 3 drops of food coloring into another third.
  • Spoon dollops of each mixture randomly over the chilled biscuit base. Swirl together with a knife. Refrigerate for 4 hours until set. Cut into portions and serve.
