Strawberry Nesquik Layer Cake

Delicious Nesquick layer cake: Strawberry cake filled with whipped cream and topped with cream cheese frosting - a irresistible summer treat!
Ingredients:
  • 1.5 cups white sugar
  • 1 cup unsalted butter, at room temperature
  • 0.5 cup strawberry-flavored milk powder (such as Nesquik®)
  • 4 eggs, separated, at room temperature
  • 8 drops red food coloring, or as desired
  • 3 cups unbleached all-purpose flour
  • 3 teaspoons baking powder
  • 2 pinches salt, divided
  • 1 cup whole milk, at room temperature
  • 2 cups cold heavy cream
  • 2 tablespoons confectioners' sugar
  • 1 (3.4 ounce) package instant vanilla-flavored pudding mix
  • 2 tablespoons whole milk, or more as needed
  • 0.75 cup chopped fresh strawberries
  • 1 (8 ounce) package cream cheese, softened
  • 0.5 cup unsalted butter, at room temperature
  • 0.5 cup shortening
  • 1 (16 ounce) package confectioners' sugar
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) while preparing two 9-inch round cake pans with a light greasing and dusting of flour.
  • In a mixing bowl, whisk together sugar, butter, and strawberry powder until smooth and fluffy for about 5 minutes. Add egg yolks one at a time, beating well after each addition. Stir in vanilla and food coloring and continue beating until the color is evenly distributed throughout.
  • In a separate bowl, combine flour, baking powder, and a pinch of salt. Gradually add the flour mixture to the creamed mixture in three parts, alternating with milk. Remember to scrape down the sides and bottom of the bowl. Beat the batter for an additional minute.
  • Using a mixer with a whip attachment, beat egg whites and a pinch of salt until stiff peaks form in a separate bowl. Fold whipped egg whites into the batter gently until smooth. Pour the batter into the prepared cake pans.
  • Bake in the preheated oven for 25 to 30 minutes until a toothpick comes out clean from the center. Let cool on a wire rack for 15 to 30 minutes, then flip and invert onto the rack to cool completely.
  • Prepare the filling while the cake layers cool: Whip cream and confectioner's sugar until soft peaks form. Gently mix in pudding mix until thick, then add milk until smooth. Fold in strawberries and set aside.
  • Prepare the frosting: In a mixing bowl, using an electric mixer, blend cream cheese, butter, and shortening until creamy. Scrape the sides, then add confectioner's sugar and beat until smooth.
  • Assemble the cake by spreading the filling between the cooled layers. Then, frost and decorate the cake as you like.
