Indulgent Mexican custard, a luscious delight found in top Mexican and New Mexican eateries.
Ingredients:
  • 4 cups milk, divided
  • 0.25 cup all-purpose flour
  • 4 egg whites
  • 0.75 cup white sugar
  • 1 pinch ground cinnamon
Instructions:
  • In a large bowl, combine 1 cup of milk with flour and egg whites.
  • In a saucepan, combine the remaining milk with sugar and salt. Bring the mixture to a boil over medium heat. Stir in the egg white mixture and cook, stirring constantly, until a frothy custard forms, which should take about 10 minutes. Remove from heat and allow the custard to cool.
  • Present the dish generously in a large serving platter or in individual cups, dusted with a touch of aromatic cinnamon on the top.
