Try our tasty pork chop casserole with Spanish rice and bell peppers for a simple and delicious meal.
Ingredients:
  • 1 tablespoon vegetable oil, or as needed
  • 6 pork chops
  • 1.5 cups uncooked rice
  • 3 cups water
  • 1 (8 ounce) can tomato sauce, or more to taste
  • 0.5 (1 ounce) package taco seasoning mix
  • 1 red bell pepper, sliced into rings
  • 1 cup shredded Cheddar cheese, or to taste
Instructions:
  • Preheat the oven to 350°F (175°C).
  • In a skillet over medium-high heat, sizzle the pork chops in oil until beautifully browned on both sides, about 5 minutes. Gloriously place them in a 9x13-inch baking dish, sprinkle with salt, and surround with rice.
  • Combine water, vibrant tomato sauce, and flavorful taco seasoning in a bowl. Pour this delectable mixture over succulent pork chops nestled on a bed of fluffy rice. Seal the baking dish's flavors by covering it with a shimmering aluminum foil.
  • Bake in the oven until the rice is tender and most of the liquid is absorbed for about 1 hour. Uncover, add bell pepper rings and cheddar cheese on top. Bake for an additional 15 minutes, or until the cheese melts.
