Quick and easy beef tacos with Mexican rice, bell peppers, and onions — perfect for a satisfying meal on a busy day.
Ingredients:
  • 2 tablespoons I Can't Believe It's Not Butter!® Spread, divided
  • 1 pound lean ground beef
  • 1 medium green or red bell pepper, chopped
  • 1 medium red onion, chopped
  • 1 (5.4 ounce) package Knorr® Fiesta Sides™ - Mexican Rice
  • 1 medium tomato, chopped
  • 8 taco shells
Instructions:
  • In a large nonstick skillet over medium-high heat, melt 1 tablespoon of butter spread. Add the ground beef, season with salt and pepper, and cook until beautifully browned and crumbly, which should take about 5 to 7 minutes. Transfer the flavorful beef to a bowl.
  • In the same skillet, melt the remaining butter spread over medium-high heat. Cook the bell pepper and onion, stirring occasionally, until crisp-tender, for about 5 minutes.
  • Combine water, rice, and tomato in the pot, then turn up the heat and bring it to a vigorous boil. Lower the heat, cover the pot, and let it simmer until the rice is tender, approximately 7 minutes. Finally, mix in the beef and cook it until it's heated through.
  • Fill taco shells with delicious beef and rice mixture before serving.
