Mexican sausage rolls

Cheesy sausage rolls filled with nutritious veggies - a family favorite!
Ingredients:
  • 18.20 gm olive oil
  • 1 carrot, peeled, coarsely grated
  • 1 zucchini, trimmed, coarsely grated
  • 500g pork and beef mince (see note)
  • 30g (1/3 cup) dried breadcrumbs
  • 30g packet taco spice mix
  • 2 sheets frozen puff pastry, just thawed
  • 1 egg, lightly whisked
  • 30g (1/4 cup) finely grated cheddar
  • Mashed avocado, to serve
  • Lime half, to serve (optional)
  • Coriander sprigs, to serve (optional)
  • Mild salsa, to serve
Instructions:
  • Preheat the oven to 200C/180C fan forced and prepare 2 baking trays with baking paper.
  • In a frying pan over medium heat, sauté the onion in oil until slightly softened, about 2 minutes. Add the carrot and zucchini and continue to cook until softened, about 3 minutes. Allow the mixture to cool slightly before blending in a food processor until smooth.
  • In a large bowl, combine the mince, pureed vegetables, breadcrumbs, and taco spice mix. Mix thoroughly with your hands, then divide the mixture into 4 equal portions.
  • Place a sheet of pastry on a flat surface and divide it in half. Spread the meat mixture along one side of the pastry. Coat the other side of pastry with egg wash. Roll it up, ensuring the edges overlap slightly. Slice into 5 pieces and position them, seam side down, on the baking sheet.
  • Continue with the rest of the pastry and filling. Glaze the tops of the sausage rolls with the remaining egg. Bake in the oven for 20 minutes. After, sprinkle with cheese and bake for an additional 10 minutes until they turn golden. Mix the mashed avocado with lime juice and coriander to your preference. Enjoy with salsa and avocado for dipping.
