Ingredients:
  • 9.20 gm olive oil
  • 1 medium brown onion, chopped
  • 680g beef sausage
  • 1 medium red capsicum, chopped
  • 1 medium zucchini, chopped
  • 410g can chopped tomatoes
  • 375g jar medium thick and chunky salsa
  • 10 mini flour tortillas
  • 312.50 ml grated tasty cheese
  • 40.00 ml finely chopped fresh coriander
  • Cooked fusilli pasta, to serve
Instructions:
  • 1. Preheat oven to 200°C/180°C fan-forced. 2. Heat oil in a large frying pan over medium-high heat, then add onion and cook for 3 minutes until softened. 3. Squeeze sausage filling from casings into the pan and cook for 8 minutes, breaking it up with a wooden spoon until browned. 4. Drain excess fat from the pan.
  • Toss in capsicum and zucchini and sauté for 3 minutes. Stir in tomato and salsa. Lower heat and let simmer for 20 minutes without cover, stirring occasionally, until slightly thickened.
  • Line 2 large trays with foil. Arrange 5 tortillas on each tray and generously sprinkle with cheese. Bake for 5 to 7 minutes, rotating trays halfway through, until the cheese is melted and the tortillas are golden. Finish by sprinkling with fresh coriander and folding the tortillas in half.
  • Enjoy the flavorful sausage mixture with pasta and gooey cheesy tortillas.
