Mexican Steak Stir-Fry

Quick and delicious beef and bean meal in under 30 minutes. ¡Delicioso!
Ingredients:
  • 3/4-pound beef boneless sirloin steak, about 3/4 inch thick
  • 1 medium onion, chopped (1/2 cup)
  • 1/2 cup chopped green bell pepper
  • 1 cup frozen corn
  • 1/2 cup thick & chunky salsa
  • 1 medium zucchini, sliced (2 cups)
  • 1 can (15 oz) pinto beans, drained, rinsed
  • 1 can (14 1/2 ounces) no-salt-added whole tomatoes, undrained
Instructions:
  • Trim excess fat from beef. Slice beef into thin 2-inch strips, then thinly slice strips across the grain into 1/8-inch slices.
  • Coat a large nonstick skillet with cooking spray and heat over medium-high heat. Cook beef, onion, and bell pepper for 4 to 5 minutes, stirring often, until beef is cooked through and no longer pink.
  • Add all remaining ingredients and gently mix them together, ensuring the tomatoes are broken up. Cook for approximately 5 minutes, stirring occasionally, until the zucchini is tender and the mixture is heated through.
