Make a mouthwatering Mexican casserole with seasoned ground beef, canned veggies, salsa, Tater Tots®, cheese sauce, and zesty taco sauce for a quick and easy meal.
Ingredients:
  • 2 teaspoons vegetable oil, or as needed
  • 1 (15.25 ounce) can whole kernel corn, drained
  • 1 (4.5 ounce) can sliced mushrooms, drained
  • 1 cup diced green bell pepper
  • 0.5 cup mild salsa
  • 0.5 large tomato, diced
  • 3 tablespoons mild nacho cheese sauce
  • 1 pound ground beef
  • 0.25 cup mild taco sauce
  • 1 (16 ounce) package frozen bite-sized potato nuggets (such as Tater Tots®)
  • 1 cup shredded Mexican cheese blend
Instructions:
  • Preheat the oven to a toasty 425°F (220°C) while you grease a 9x13-inch casserole dish.
  • Combine corn, mushrooms, green bell pepper, salsa, tomato, and nacho cheese sauce in a bowl. Spread this mixture over the bottom of the prepared dish. In another bowl, mix ground beef and taco sauce together, then add to the corn mixture in the dish and stir until combined. Layer potato puffs on top of the casserole and finish by sprinkling with shredded Mexican cheese blend.
  • Roast in the oven until beef is cooked through, approximately 25 minutes.
  • Position oven rack 6 inches from heat source and preheat broiler. Broil casserole until top is golden brown, approximately 5 minutes.
